It is an educational institution created by the Niigata Sake Brewers Association in 1984 in anticipation of the shortage of successors to sake brewers.Niigata Prefecture is the only prefecture in the world that has such a sake school.

The Niigata Prefectual Sake Research Institute is a research and guidance institute established by the prefecture in response to the demands of the Niigata sake brewing industry at the time, such as improving the quality of sake produced in Niigata prefecture, training sake brewing employees, and improving the rice for sake brewing.

Sake lees are rich in nutritional and functional ingredients. “Sakasuke” is made with unique lactic acid bacteria and ａ special manufacturing method. Therefore“Sakasuke” has superior nutritional and functional ingredients to sake lees.
